Growing up my mom cooked dinner almost every night, but she rarely baked. It wasn't her thing (still isn't). The one thing we'd bake together on a regular basis though was banana bread. We used the Joy of Cooking recipe and it was supermoist and delicious every time! There was something intoxicating about the smell of banana bread baking through the house.
The other night, I was on the phone with my friend Lallie, pacing through my kitchen trying to follow conversation and keep dinner warm (as Richie hit traffic and was more than a half hour later than planned) when I saw 4 overly ripe bananas in our fruit basket. Score! Banana bread!
I adapted this recipe from one in The Kind Diet that was meant to be pumpkin bread I think and it was absolutely perfect. Richie snuck some before I could even notice, I ate some as a late night snack in bed, and Avi gobbled some down for breakfast. Yum!
I bet this'd be fantastic with pumpkin or zucchini in place of banana as well! Do any of you have any amazing banana, pumpkin, or zucchini bread recipes to share?!?
