A couple weeks ago, when I was up at my parent's house with Avi, my mom made us the most delicious meal. I generally stay away from white potatoes in my house, so it was a treat when she suggested vegan meatloaf, mashed potatoes, and peas & carrots. It was an all American feast and totally retro!
She had a Field Roast meatloaf in the fridge (I've mentioned them here and here and here). We smothered it in organic ketchup (which is amazingly sweeter and thicker than regular old ketchup) and baked it to perfection. She made her old-fashioned mashed potatoes (veganized of course) and we steamed some peas and multi-colored carrots with it (then topped them with a bit of Earth Balance and salt of course). Everything was fantastic and a real treat!
