In the midst of the madness, I found a moment the other day to bake some pumpkin cookies. With all the nursing I've been doing, and the superhealthy eating, I've been craving some sweets. And although there are great vegan baked goods options in my hood, they're not always the most healthful (think margarine, sugar, white flour, etc), so I like to have home baked sweets in the house that I know I and trust and indulge in, guilt-free;)
I posted my recipe here. You can do any add ins you like: pepitas, walnuts, raisins... I love the chocolate chips! They are totally healthy, delicious, and perfect for this fall weather.
