Ok... so the time has come for another dessert post.  Since this is the last month of the summer and we are heading into fall, I thought a nice apple recipe would get you in the mood for a yummy fall treat.  This is really easy, like my other recipes.  For a little extra indulgence, feel free to add a scoop of vanilla vegan ice cream, although i think this is pretty delicious on it's own!

Makes  4 servings - preheat oven 350

1 sheet of phylo dough

1 apple thinly sliced

1 tablespoon vanilla

1 teaspoon cinnamon

Earth Balance butter

1/4 cup sugar cane plus more for sprinkling

Slice dough into triangles and poke with a fork all over.

In a medium bowl, combine apples, cinnamon, vanilla, and 1/4 cup  of the sugar.

Place in the apples in center of the dough equally and add pieces  of earth balance on top of the apples.

Close the triangle so it forms a triangle pocket with all sides sealed.  As a tip folder at the 90 degree angle.

Melt a little earth balance and spread on top of the pocket and then sprinkle with sugar and cinnamon.

Bake for approx 23 min.
